1 1/2 cups cooked brown rice
1 cup shredded zucchini
1/4 cup chopped onion
1/2 cup wheat germ
1/4 cup chopped walnuts
1 cup shredded low-fat cheddar cheese
2 eggs
1/4 cup egg substitute
1 tsp thyme
1 tsp marjoram
1/4 tsp pepper
1. Preheat oven to 350 degrees. Spray a 9-inch by 5 inch loaf pan
with nonstick cooking spray.
2. Combine all ingredients. Pack into loaf pan. Bake for 40 to
45 minutes or until brown on edges and firm to the touch. Cut
into slices. Serve hot or at room temperature.

IRISH STORY
His name was Fleming, and he was a poor Scottish farmer. One day, while trying to make a living for his family, he heard a cry for help coming from a nearby bog. He dropped his tools and ran to the bog. There, mired to his waist in black muck, was a terrified boy, screaming and struggling to free himself. Farmer Fleming saved the lad from what could have been a slow and terrifying death.
The next day, a fancy carriage pulled up to the Scotsman’s sparse surroundings. An elegantly dressed nobleman stepped out and introduced himself as the father of the boy Farmer Fleming had saved.. ‘I want to repay you,’ said the nobleman. ‘You saved my son’s life.’
‘No, I can’t accept payment for what I did,’ the Scottish farmer replied waving off the offer. At that moment, the farmer’s own son came to the door of the family hovel. ‘Is that your son?’ the nobleman asked.
‘Yes,’ the farmer replied proudly.
‘I’ll make you a deal.. Let me provide him with the level of education my own son will enjoy. If the lad is anything like his father, he’ll no doubt grow to be a man we both will be proud of.’ And that he did.
Farmer Fleming’s son attended the very best schools and in time, graduated from St. Mary ’s Hospital Medical School in London, and went on to become known throughout the world as the noted Sir Alexander Fleming, the discoverer of Penicillin.
Years afterward, the same nobleman’s son who was saved from the bog was stricken with pneumonia.
What saved his life this time? Penicillin.
The name of the nobleman? Lord Randolph Churchill ……………………
His son’s name? Sir Winston Churchill.

HOOKED ON GIVING
Dr. Mar Aprem of the ancient Chaldean Orthodox Church of the East in
India tells a funny story about when a member of the church won a
lottery worth 100,000 rupees. His wife went to the bishop and told
him that she was afraid to tell this glad news to her husband because
he had a heart problem and any sudden excitement could cause a heart
attack.
The bishop offered to break the news gently to her husband. He
visited the house and asked the man, “Wouldn’t it be a good thing if
you won 1,000 rupees in the lottery?” The man replied that he still
would have to work to support his family.
“What about 10,000 rupees?” the bishop asked. The man still showed no
excitement, so the bishop carefully raised the amount to 50,000 and
finally to 100,000 rupees.
“If I got 100,000 rupees, I would give half of it to you, your
Excellency,” the man replied.
The bishop had a heart attack, and the man called an ambulance.
We can get excited about winning and getting. But have you learned
how fun it is to give — and not only money? Engineering and
machinery genius R. G. LeTourneau (1888 - 1969) discovered the great
joy that can come of generosity. Besides establishing a private
school (today’s LeTourneau University), that remarkable man
reportedly gave 90 percent of his income to worthwhile causes, while
living on the remaining 10 percent. He became hooked on giving!
And like I said, money is not the only commodity that is fun to give.
We can give time, we can give our expertise, we can give our love or
simply give a smile. What does that cost? The point is, none of us
can ever run out of something worthwhile to give.
Giving is fun. And addictive.
Focus on the good things that are happening

BLONDE ROBBERS
Two blondes were planning to rob a bank.
The first blonde had a tendancy to be smarter than the second.
They went over and over their plans for the robbery and finally they headed out to commit the crime. They pulled up in their car in front of the bank.
The first blonde says to the second blonde, “Are you SURE you understand the plan?”
“Yes!” replied the second blonde.
So the second blonde gets out of the passenger side of the car and heads into the bank. Time passes, and after 10 minutes the second blonde has not returned.
The first blonde gets very nervous.
Finally, out comes the second blonde from the bank dragging the safe behind her by a rope, and seconds behind her comes the guard with his pants down.
“No you idiot! I told you to blow the SAFE and tie-up the GUARD!”

MUFG agrees a new formula for Morgan Stanley deal

Morgan Stanley has been forced to renegotiate the terms of a planned $9bn cash injection from Japan’s Mitsubishi UFG, following the steep fall in the price of its shares since the deal was announced last month.
The Japanese bank still plans to invest $9bn and take a 21 per cent share of Morgan Stanley, but under a changed formula that will see the entire investment in the form of convertible preferred shares at a significantly lower price than previously agreed.
Under the original deal, MUFG would have invested $3bn in 9 per cent of Morgan Stanley’s common stock at $25.25 a share, and another $6bn in convertible preferred stock. The convertible stock was to pay an annual dividend of 10 per cent, and convert into common stock at $35.25 in two tranches over the coming two years.
Under the new terms being discussed, the entire $9bn would be in the form of convertible preferred stock, that would eventually convert into common stock at a price that is expected to be between $20 and $25. Both sides have said they expect the deal to close on Tuesday.
MUFG has been facing pressure to change the terms of the deal as Morgan Stanley’s share price has plummeted since it was announced on September 29. On Friday, doubts over the transaction contributed to Morgan Stanley’s stock falling over 20 per cent to $9.68. It fell 60 per cent over the past week, reducing its market value to just over $10bn.
The situation has been further complicated by growing indications that the US Treasury is preparing to make funds available for recapitalsing US banks. Such a move could threaten the status of preferred shareholders.
Morgan Stanley has said it does not need public funds to strengthen its balance sheet. A person familiar with the negotiations said there were no plans for the bank to seek any government funding alongside the investment from MUFG.
However, the US -government is expected to express its support for the deal, and to work to structure any potential future investment in a way that would protect MUFG’s investment.
*Spain’s Banco Santander was in advanced talks late yesterday to acquire full control of Sovereign Bancorp of the US, Reuters reports from New York. Santander is expected to pay about $3.81 a share, which was Sovereign’s closing price in Friday trading on the New York Stock Exchange, valuing the company at about $2.53bn.

Puffed, brown, and crusty on the outside, eggy-soft in the
middle, and topped with caramelized brown sugar and cinnamon
apples, this pancake is simply a slice of heaven. For a
sumptuous brunch, serve with lean turkey sausages or
Canadian bacon, freshly squeezed orange juice, and a mix
of cantaloupe and honeydew melon.

Serving Size: 6
1 cup fat-free milk
3/4 cup all-purpose flour
2 egg whites
1 whole egg
1/2 tsp baking powder
2 Tbsp sugar
2 Tbsp margarine,melted
2 tsp pure vanilla extract
1 tsp grated lemon zest
1 large tart apple, peeled, cored, and thinly sliced
2 Tbsp brown sugar
2 tsp lemon juice
1/4 tsp cinnamon
1. Preheat the oven to 400 degrees F. Spray a 10-inch ovenproof
skillet with nonstick pan spray.
2. Combine all the pancake ingredients in blender or food processor;
blend until smooth.
3. Pour into the prepared skillet; bake for 20 to 25 minutes or
until puffed and browned.
4. Meanwhile, spray a small skillet with nonstick pan spray.
Add the apples slices, brown sugar, lemon juice, and cinnamon.
Saute over low heat until the apples are softened and slightly
caramelized, about 10 minutes.
5. Spoon over the pancake. Cut the pancake into 6 servings and
serve immediately.
